Chocolate Raspberry Peanut Butter Cup Cookies

I've been in a baking lull.  Hub was out of town for two weeks.  It is hard to bake when he's gone...otherwise, I'd eat everything that I make.  Everything.  So, for my self control issues (or lack thereof), it's best that I don't bake alone.  Yes, I could bring it all to work for my buddies, but still, the number of servings would be substantially less than when they came out of the oven.

But...he's, first up on the recipes that I've been hoarding.  Chocolate Raspberry Peanut Butter Cup Cookies.

Seriously?  Chocolate Chips - Peanut Butter AND...Raspberry Ghirardelli squares.  Good heavens, what could make it heavenly?  (caramel, but that will be next trick to try)

What is so awesome about these, (aside from the flavor and texture) is that everyone who has tried/taste tested them, nobody could figure out the secret  ingredient (Raspberry Ghirardelli squares) until I told them, then it was an instantaneous "ah yes, I can taste the raspberry!".

So satisfying to not only make something tasty, but to surprise people at the same time.  Makes me is good.

Blueberry Pound Cake

I think I have found the perfect Pound Cake.  It's fantastic as Chocolate and White and now it turns out using blueberries instead of chocolate (what???!?) is just as delightful.

So I went from making it sinful, by using milk chocolate and white chocolate to making appear to be a touch healthy by using blueberries.  Sneaky, I know, but it so worth it.  I can see raspberries and strawberries, too.  Add some blueberries to those colorful red berries and viola, 4th of July desserts.

And yes, I would serve this fruit laced pound cake for breakfast at our bed and breakfast, and also, as an afternoon snack with a nice cup of tea.  Again, love multi-purpose recipes

Walnut & Chocolate Caramel Cookie Cake

Interesting name, right?  The original recipe is from Joy the Baker and it included adding a banana.  I am finding that when I bake with banana, it doesn't last very long...well, we can't eat it fast enough to not have it go bad.  Sooooooooooooo, I dropped the banana from the recipe and viola, 2 days later, it's still freakishly good.

Oh!!! And I added a secret ingredient that makes everything, in my eyes, better.  Caramel.  I added little caramel balls and every bite was a little extra gooey.  Love.

I didn't bake it in a cast iron skillet.  I have a nice 8 x 8 pan that has a cover on it, so it's easier to bake and store.  It tastes like a big chocolate chip cookie with some gooey caramel in it.  That makes me happy.  I'm not sure why it's called a's more cookie-like....but call it whatever you'd like, just try it!
